I love fajitas and, before my embarking on my health journey, I used to buy the ready-made spice mixes from the supermarkets without much thought of what other ‘nasties’ are added to these commercially-made products. These days, I love to experiment with making different spice mixes. This fajita spice mix is one that I absolutely love and I want to share it with you all. It’s very spicy, so perhaps add only some of the chipotle powder first, taste it and if you know you can handle more ‘heat’, then by all means add more chipotle powder! If you love the flavour, then you can double or triple the quantity to make a larger batch. This spice mix is also great for sprinkling over roasted veggies, or as a rub for meat. I hope you like it! Tip: To make a Mexican dish taste more authentic, add some fresh lime juice and fresh coriander leaves to the meal just before serving.

In a small bowl, add the following and mix well to combine:

2 tsp chipotle powder

1 tsp ground cumin

1 tsp ground coriander

1 tsp smoked paprika powder

1 tsp garlic powder

1 tsp onion powder

1 tsp fine Himalayan salt

Transfer to a small airtight container/jar. Store in a cool, dry place away from light. Stores well for a couple of months.
